Ingredients:
- 2 cups grated zucchini (about 2 medium-sized zucchinis)
- 2 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg (optional)
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup raisins or chocolate chips (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9×5-inch loaf pans.
- Prepare the Zucchini: Grate the zucchinis and place them in a clean kitchen towel or cheesecloth. Squeeze the zucchini to remove excess moisture.
- Mix Dry Ingredients: In a large bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Mix well.
- Mix Wet Ingredients: In another large bowl, whisk together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
- Combine Wet and Dry Mixtures: Add the grated zucchini to the wet mixture and stir to combine. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix; a few lumps are fine.
- Add Nuts or Other Mix-Ins: If desired, fold in the chopped nuts and raisins or chocolate chips.
- Fill the Loaf Pans: Divide the batter evenly between the two prepared loaf pans.
- Bake: Place the loaf pans in the preheated oven and bake for approximately 55-60 minutes or until a toothpick or cake tester inserted into the center comes out clean.
- Cool: Allow the zucchini bread to cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
- Slice and Serve: Once the bread has cooled, slice and serve. It’s delicious on its own or with a spread of butter or cream cheese.
